I am eating from my garden things I grew a couple if years ago as I preserved them, Apple, Cherries, Carrots, Beans, Rhubarb, Strawberries.

I think it's probably common to harvest the first slicing tomato and think, "BLT!"

Made a cheater easy eggplant Parmesan!  It was really delish!  Just used my oven to super heat up some Ping Tung eggplant with oil.  Cut them on the bias.  Then put them in a 9x9 with fresh mozzarella, Panko, Italian seasonings, Parmesan of course and covered.  Baked for an hour.  Uncovered, added more spices.  Really good!

I made this tomato pie (very savory and yummy) to use up my last red smallish Brandywines.  It was delish!

OK, so I tried my dehydrated garlic today from last year, and ground it up in the mortar and pestle that I got as a gift from Amazon at Christmas last year.  Wow.  Just here to say this is great.  My garage smelled like garlic for a couple months…but I am here to say—worth it.

Unbelievable flavor—and this quite frankly is from something that would have been pitched!  It was literally 2021 garlic.  But dehydrating it this summer and putting it in a couple canning jars, yeah—it’s a GO!  

This dehydrator was a gift from my kids last Christmas, I didn’t ask for it.  But do I love it?  Yes!

For dinner this evening, we'll be having Roasted Butternut Squash. While checking the storage of this year's winter squash I found one of the Butternuts that is bursting with energy, and coming out of its skin. Never have had this happen to a winter squash before, but it is apparent it must be baked before it is too late.
