Making Johnny Marzetti with frozen sweet peppers from 2020, and garlic from this past summer. Yum! Comfort food…

Re: What are you eating from your garden today?
Being only a young sfg garden, my plants are struggling to get tall enough before i start eating them

Yesterday picked a handful of apachi chillis, tunred them into a dip wih cream cheese and some fresh lime juice. Pulled a couple of spring onions and did the same, so we sat around with drinks and dips

Broccoli 2 nights ago. New Zealand spinach (in lieu of kale since I didn't plant it) for tonight's Mediterranean Chicken Thighs with Greek Seasoning (made with a lot of my dried herbs).

I made cheeseburger soup with 4 of my dwindling Yukon Golds, and the last of my celery! Yummy comfort food!

Re: What are you eating from your garden today?
Made a crockpot of Beans & Ham for dinner. Almost everything in the meal was from the garden except for the ham and spices. The Great Northern beans, garlic, onions, tomato sauce, and carrots were all from the garden. Hate shelling dried beans, but love eating them in the dead of winter.

Baked the last remaining Red Kuri squash for dinner last evening. That roasted squash is so sweet it is more like a dessert than a main course.

Re: What are you eating from your garden today?
What did you do with your squash OG? I have 4 left. 2 largish and 2 smaller! I LOVE THEM!OhioGardener wrote:Baked the last remaining Red Kuri squash for dinner last evening. That roasted squash is so sweet it is more like a dessert than a main course.
I have made them mostly like I do Acorn squash, with butter and brown sugar/maple syrup. Very tasty and yum!
Do you do anything differently?

I do pretty much the same thing, except use only brown sugar instead of maple syrup, and sprinkle with cinnamon. Bake at 375ºF for about 30 minutes, or until fork tender. They are sooooooo tasty.

Stir fry with kale, chard, butternut squash
Kale, chard, and butternut squash from the garden, made with midwestern seitan and served on a bed of rice. Yep, I'm a regular Knight in the kitchen. That makes me a Knight in Seitan's Service *

Re: What are you eating from your garden today?
Swiss chard, walking onions, and broccoli flower stems. (I mostly leave the flowers for the early pollinators.)
Ukrainian salad
My daughter made tonight's meal. It was soup (not shown) and salad
Salad -- Ukrainian Red Kale and Merveille lettuce

Toppings

Which included garden "wasabi" radish, cherokee tomatoes, and nasturium. Sadly, I can't claim the cucumber. Never have much luck with cucumber.
