Pulled the first beets today. For dinner we'll have Buttered Fresh Beets, and the greens will be steamed and put in the freezer.
Three or four plants always germinate for each beet seed I plant. I let them all grow, and then thin them periodically by pulling the biggest roots for eating and letting the remaining plants grow. Once they are down to one plant in each space, they are allowed to fully mature for bigger roots.

Lettuce.
I have been harvesting lettuce , kale, arugula andchives and have been having salads galore! Also using my basil for pasta and in salad as well.

Lots of Snow Fairy tomatoes while waiting on the heirlooms and paste.
Roasted eggplant and golden zucchini

My first head of green cabbage! Soaking in slat water at the moment to make sure no green manolichis are in there! Want to sauté with onion, garlic and turkey kielbasa for supper.

Lemongrass
In this case, "eating" is actually "drinking."
I was up a little early and my daughter surprised me by asking if it was OK to pick some lemongrass. It's been growing up front for more than a year, so I wasn't sure about harvesting. Anyways, I ended up pulling a stalk for her to make lemongrass tea.

Cooked up some smoked turkey sausage, with 4 cloves of new garlic, green onions, and the head of red cabbage with store bought Yukon Gold potatoes—really good!

That was Banana Pepper Casserole. Sweet Banana Peppers sliced in half lengthwise with seeds removed, arranged in casserole dish with cut side up, covered with pre-cooked sausage and minced garlic, then topped with enchilada sauce and baked. After it is baked, it is covered with shredded cheddar cheese and returned to turned-off oven to melt the cheese.

Dinner this evening was Sausage-Stuffed Zucchini Boats, and Candied Carrots. Everything but the sausage and cheese came from the garden.
