Zucchini preserving
Any great ideas, recipes for this?
I have fermented some zucchini pickles. I thought of cooking them down to mush with garlic and herbs, and then freezing that as a soup base. If I dry them will they only be good for soup?

Forget store bought relish; this year I made Zucchini Chowchow with my summer squash, peppers, onions, and the regular pickling ingredients! The recipe is from Amy Goldman's The Compleat Squash, A Passionate Grower's Guide to Pumpkins, Squashes, and Gourds.

Mmm, yes, zucchini relish!
Turan, I've never found a use for dehydrated zucchini beyond soups, stews and chili. Hoping someone else has some ideas for you.

Just when you think you can't find any more ways to use all of the Zucchini, we made Air Fryer Zucchini Fries. Delicious with ranch dressing dip!
