First red kidney bean harvest....now what?
We did red kidney beans for the first time this year. Super easy grower. A friend told us to wait until the pods were dry enough to feel brittle, which they are, so I've picked most of them and now have a big bowl full of pods. Whats next? Do we let them dry further before shelling them or can we do that now? Are there potential dangers to be aware of when storing them? Any advice is much appreciated.

I'm doing cowpeas, tepary beans, and butter beans for the first time, so I am also interested in this thread. You're off on the right foot by not picking until they were brown and brittle. I picked and tried to shuck some too soon and they were almost impossible to get out of their pods, but then I have to learn almost everything the hard way.Sunsanvil wrote:We did red kidney beans for the first time this year. This is only my second year doing dry beans so I'm no expert. I just harvested my bush dry beans the other day - this year, Marfax and Peregion. (I have pole beans, too.) I recommend you shell them out of the pods and spread them to dry further on a cookie sheet (or whatever) indoors. I had issues last year with a few beans going moldy when I left them all in a bucket and didn't shell them quickly enough (I waited several days.) They should already be mostly dry, but a few days airing out of the pods helped mine. They should be hard once dry. I stored mine in jars in a cool, dark, dry place.
Dangers/possible problems:
Don't eat raw kidney beans. Don't eat soaked/sprouted kidney beans without cooking. They must be fully cooked.
Older beans take longer to cook.
Bean Weevils - I haven't had a problem with this, but I've read freezing after drying, but before storing at room temperature, prevents the problem.
Pantry moths - Also a potential problem that I presume freezing would prevent
If you plan on planting back, remember to set aside beans to use as seed for next year, now (once dry), and label them, so you don't accidentally eat all of your tasty homegrown beans.
I'm quite unclear on how freezing affects potential germination of beans seeds. I'm pretty sure I've read both not to do it, and that it's fine/recommended....

Beetles, I think you've got it down... I PERSONALLY would go ahead & freeze to take care of any pesky bugs... I pop them in for a couple of weeks.
