Fourth of July dinner at son's and DDIL's house. Egg and corn battered eggplants fried in olive oil (my garden) with Halibut sone caught in the pacific ocean!

Last night I harvested my first Ping Tung eggplant, and sauteed it up with some EVOO and a bit of herbs...wow! So not-bitter! Very tasty, different than any eggplant I have ever had from store or farmer’s market...nutty almost.

Last night dinner included kohlrabi, tomatoes and basil from the SFG. This morning I used kale from the garden to make a green smoothie.

Today it is fresh salad with Black Seeded Simpson lettuce, radishes, cucumbers, tomatoes, green onions, and bell peppers; with Sweet Banana Pepper Casserole as the main dish, with sides of green beans, Detroit Red beets, and Swiss Chard. For appetizers, I had Jalapeño Poppers. I love the fresh vegetables of summer!

So I am curious, OhioGardener, what is in the banana pepper casserole? Can you post it under recipes? I am swimming in peppers of several varieties! It is a wife-created dish, Scorpio, and not the same any two times in a row. Basically, she slices the Banana Peppers in half, removes the seeds, places them in the casserole dish cut side up. She then "stuffs" each half with mixture of sausage or hamburger and Basil, Oregano, chopped onions, chopped garlic, salt, and pepper. It is then covered with tomato sauce or pasta sauce and baked for about 45 minutes at 350°F in the convection oven.

We LOVE home based recipes!! Post it, OhioG! I have a ton of peppers, and really love them but yowza! I just picked 4 more tonight...various varieties, which your recipe would accommodate well, sounds like. Could be titled Pepper Casserole? Swiss chard, tomatoes, corn, and zucchini. Bumper crop of zucchini and I didn't even plant the stuff. Found a recipe for chocolate chip zucchini bread. If its good I can makes loads of that and freeze slices to eat. Got over 25 pounds of zucchini, chickens are helping out and eating some almost every day.

Had the most delicious chef salad for dinner this evening - lettuce, cucumber, tomato, bell pepper, onion, radish, and carrot (all fresh from the garden) - topped with sliced hard boiled eggs, roast chicken breast, and blue cheese dressing. A side of pickled peppers topped it off! Love this time of the year when we eat almost entirely from the garden.
Never plant without a bucket of compost at your side.

Love your signature - "Great compost eliminates the purchase of commercial fertilizer."! In about 60 years of organic gardening, I've never found a need for chemical or commercial fertilizers. On the other hand, I never seem to have enough compost....

Thank you OG. I was delighted to learn this through SF Gardening. It takes effort but the result is tremendous and well worth it. I've had 8 ft tall tomato plants that had to be topped off several times. Great compost as you know is Gold !
