We prepare them several different ways, and seem to like all of them about equally. One way we prepare them is to peel them, then shred them to make a coleslaw type salad.
One of our favorite ways to prepare it as a side dish by dicing it, and then sauteing it with olive oil, onions, garlic, dried thyme, and a little red pepper flakes.
Another way we just discovered is roasted chips in the air fryer. The results are similar to potato chips, but with a distinct flavor. We found this recipe for them, and the results were worth the effort.

kohlrabi is really good chunked up and roasted. We like some spices especially a good smoked paprika. Right out of the oven, a heavy dose of parmesan (not the wood filler that Kraft sells). Have tried turnips the same way, They don't seem to hold up as well. I have tried both in the air fryer and think I like the oven better for both.
I pulled several radishes and 1/2 doz small beets, Mr Groundhog got all my salad ingredients and has started on my container potatoes so I had to make do with what was in the refrigerator. Balsamic vinegar and olive oil over lightly sautéed veggies is what I had for a late supper.

Today I harvested blushing tomatoes, hot and sweet peppers, cucumbers, and 4 purple hull pink-eyed peas. I think it was Yolos that introduced me to them. It's in the 100s now so getting anything close to ripe safely indoors. There's a huge Armenian cucumber I may give to a neighbor as I am eating pepper-cucumber salad and cucumber and bell salad every day.
