Low carb leek and mushroom soup
My DH HAS to avoid carbs. Such a trial. We are like Jack Sprat and his wife.
He is obese and has to avoid processed carbs, fats and sugars. I am tiny and need to eat carbs and fats just to maintain my weight. We both love rich foods.
Long story short - I love leeks but my DH is not a big fan. I searched for leek soup recipes and found almost all had either potatoes or dairy or a combination of the two. Not what I needed.

Several weeks ago, I used leeks in an onion soup recipe. I couldn't tell the difference, but I don't have a discriminating palette. You might look for onion soup recipes.
Sunchokes are a good alternative for a lot of folks who can't eat potatoes. They have some carbs; the GI value is 50.

I've read that mashed cauliflower makes a pretty good mashed potato substitute. I wonder if it might be possible to bind them somehow (perhaps with egg) and use them as "dumplings" in the soup?

My intent was to post my recipe. I managed to lose that part of the post.
When making soup I always make a rather large batch so I can freeze some.
In a soup pot heat 4/6 quarts chicken broth
In a heavy skillet cook 2 strips of bacon - crisp.
Remove from the skillet, drain and crumble.
In the drippings sauté on medium high (2 - 3 minutes)
1 small yellow onion - diced
1 Jalapeno - cored and minced
1 rib celery - diced
When the onions are tender reduce heat to medium and add
2 cloves garlic - smashed and minced
Cook until garlic is just fragrant.
Remove from heat.
1 lb. Cremini (Baby Bella) mushrooms - rinsed and dried.
Remove stems and slice off the hard base. Mince stems.
As soon as you remove the skillet from the heat toss in minced stems.
Add mixture and drippings to broth.
Simmer for 10/15 minutes
While simmering
Slice the mushroom caps into 1/4" slices. If the caps are more than 1 1/2" in diameter cut slices in half cross wise.
Prep 6 small or 4 large Leeks
Remove basil plate and tough greens Cut in half length wise and wash to remove dirt and grit.
Slice 1/2 inch thick
Add leeks and sliced mushroom caps to broth.
Add more broth if you do not have enough liquid.
Simmer 10 minutes.
Taste
Adjust seasoning by adding sea salt and fresh ground pepper.
If you want a little acid add 1 Tbsp. fresh squeezed lemon juice.
Quick, easy and delicious!
A real treat for my DH.
