Winter Kill temperatures for Vegetables
In researching the winter kill temperatures of vegetables, I found an interesting article by the Food and Agriculture Organization of the United Nations. It's an older article, but the information regarding temperatures at which vegetable plants freeze is still relevant.

The kill temperature information is summarized in a spreadsheet half-way down the page and is shown in degrees centigrade.
It appears that a key issue for protecting plants in winter temperatures is hardening the plants off before a hard freeze. By letting plants experience the regular temperature fluctuations that occur in late fall and early winter they become hardier and more able to withstand the very low temperatures that happen in winter.
