Carrot Top Pesto
So I made carrot top pesto; yummy! Not too different from traditional pesto; carrot tops for the basil and toasted walnuts for the pine nuts. It has a slightly grittier texture but milder flavor. I won't do it with all my carrot tops, but its a good experiment. I found the recipe in Vegetarian Times magazine; check their website for it if you are interested.

What a lovely/practical idea. No carrots in my garden at them moment, but I will keep this in mind for after my next planting.
