Parsnips Empty Parsnips

Hey guys. We planted parsnips a few weeks ago. They're doing great I think?? About a foot tall dark green and bushy. When do we harvest them? I know how to check for carrots and beets, but never grown these before??

Thanks for any info!  PS, our asparagus is doing GREAT too Smile

I harvest my parsnips after they've been touched by first frost, which is sometime in November.
I just realized you probably don't have frost. Check the package that the seeds came in and you'll have a better idea of when to harvest. If you don't have the package I guess you could check online. I think mine take about 8 months.

They are long growing, about 4-8 months.

thanks guys. Sounds like we have some time still. Some sites say 4 mos, some say a year. Sounds like it's OK to leave them in the ground? We don't get much of a frost here. MAYBE a few nights, but the ground never freezes. 
CAMP, what kind of butterfly? That would be cool The Monarchs ate all our milkweed to a stump and moved on   Shocked  What a Face

If you read the articles at the links I sent, one of them mentions swallowtails. I believe.
