Zuke cookie recipe

ZUCCHINI COOKIES

(Yum - my note)

1/2 cup butter or oil
1/2 cup honey
1 egg
1/2 tsp. VANILLA EXTRACT
1 cup zucchini, peeled and grated
2 cups whole wheat pastry flour
1 tsp. soda
1 tsp. cinnamon
1/2 tsp. cloves
1 cup chopped nuts
1 cup raisins

Cream together the first 4 ingredients. Add zucchini. Stir in the remaining ingredients. Chill dough for 1 hour. Drop by the teaspoonfuls onto a greased cookie sheet. Bake 12-15 minutes at 350°.

Yield: 3 dozen
