Re: UPDATE - photos
Okay, now that I am WAY jealous, I've decided to start some herbs indoors using the Mel's Mix, because I won't be able to garden outdoors until April..... I know, I know I am in the wrong location....
When they sprout, I'll post the pic.

Wow, most of your stuff (cukes/zukes aside) is doing so well. Must feel good!
Your papaya looks so healthy. When they're mature trees, you'll be lovin' it. Ours tended not to have too many fruits per plant, and if you love fresh papaya as much as I do, you can hardly have too many plants. There's really nothing like papaya.
Re: mint, you can freeze extra, or turn it into a paste and freeze that, or have it in your tea or coffee or just eat it straight out -- it's so useful and good for you that it's another one which it's hard to have to much of. Even the smell is amazing. I'm bummed my wonderful and vigorous peppermints came down with late blight this year. I'll start up new ones in the spring, because I can't be without mint.
Nice to see such early success after you went to so much trouble to build your raised beds just right!

Re: UPDATE - photos
I planted spearmint in all my flower gardens because it repels deer - and I have lots of those around my area... For some reason, they won't eat my flowers with the spearmint planted around... It does take over, so I just simply cut it back

I'm going to have to share that with my dad in NC. He has problems with deer. Thanks!

bugs/soil testing
The university student FINALLY got the soil samples yesterday. She's about three weeks later than what she said, so I couldn't hold off from fertilizing. I've been only been using fish emulsion, but not an even amount. I based it on what was planted, where and what desperately needed a boost.
Also, she put out yellow and blue sticky cards to do a bug study. The university will do a bug count on the beneficials vs pests. I can't wait to see what they say about both the soil and bugs!
