This is weird. I have started Broccoli, Kale inside for about 6 weeks and all are doing great.
I have just recently been putting them outside for short spurts About 3 times.
The other night I left them out all night and put the whole tray in one of my beds.
The next day Something was already eating them

I looked under the leaves, no eggs no worm poo, but out of 20 plants most had 1 little green worm (1.8 - 1/4") parallel to the stem.
How in 1 night could this happen?

They look like cabbage worms but there were no egg sacs.

I will post pics if needed

That just rots, doesn't it? She (the white cabbage butterfly) could have laid her eggs during one of those times that you were hardening them off. Or it could be slugs.

Posting pics is always helpful.

Oh yeah, that happens. The damage there is minimal, for now. Daily visual inspection and squishing them is how this is handled in my garden. You could cover them with tulle or row cover to prevent or slow further infestations.

I see a worm in the top photo on the main rib, squish it! What a Face
