Simple Roasted Carrots
This recipe is easy to make and tastes great. Roasted garlic cloves have quite a unique flavor. I find myself seeking the garlic cloves out, so I now use double or triple (up to 20 cloves) amount of garlic. Enjoy!

Simple Roasted Carrots:
About 6-8 carrots
5 cloves garlic
3-4 tbsp olive oil or cooking oil
1 tsp. Italian seasoning
salt and pepper to taste
(optional) 1 tsp. ground ginger
1. Pre-heat the oven to 400°. Wash carrots and cut into thirds. Cut thicker parts into thinner slices. All pieces should be about the same size.
2. Put carrots and peeled garlic into a bowl and add olive oil, Italian seasoning, salt and pepper (plus optional ginger) and mix well so that the oil covers all the carrots and garlic.

3. Spread carrots onto a baking sheet, you can line it with parchment paper or a silpat (I use my silpat a lot for baking, it makes it easier and is less waste than parchment).
4. Cook in the oven for about 20 minutes or until carrots are tender and you can pierce them with a fork.
