I think I will be eating a tomato sandwich every.single.day. now that the big tomatoes are ripening. Today it was a Tropic VFN which pleasantly surprised me with how sweet it was. Tomorrow will probably be Orange Fleshed Purple Smudge.

What are you eating from garden today
Nothing as delicious as Elliephant's home-grown tomatoes, but we have baby garlic (use like scallions) to add to a salad of kale, chard, lettuce and a wonderful freebie: miner's lettuce! Last year we had noticed the native Northwest plant, miner's lettuce, growing around a compost pile in the back yard. This year, I carefully transplanted 5 of the plants to their own special compost square in the old raised bed. To date, they've appreciated us with two nice pickings. Delicious little things, much like spinach. That's it for now, but the strawberries are getting ready to bloom, and the potatoes have sprouted. Snap peas starting up the string trellis, and garlic ready for its second compost side dressing.

I'm pulling an onion and cutting some chard for dinner tonight. Going to try the chard and cranberry recipe on my son's family. I liked it a lot.

But just think your daylight hours will soon be much longer than ours in the lower states so your garden will grow by leaps and bounds and then you will be eating all that you could wish for or dream about.

delicious strawberries..i get a handful a day that i eat with breakfast. And two types of lettuce (salad bowl and butterleaf). It looks like this week i'll also have a fresh tomato and possibly next week some spring peas. All I can say is YUM!

Made a salad for lunch today from garden grown: lettuce, red onion, strawberries, and radishes.
I noticed the peas have flowers, YEA. This is my first time trying peas. None of the corn I planted 2 weeks ago have shown yet so I will have to try replanting those this weekend.
But the most exciting news for me is about my 4th raised bed. We have not done much with it because it does not really get enough sun during the day. Plenty of early morning and late afternoon just before sunset but the neighbors tree completely shades it most of the day. This week DH finally agreed I could build a chicken coop and get 3 chickens. I found plans online which I think will be easy enough to build myself. I will wait until next spring to purchase the sex linked chicks after I have learned and prepared.

I cut 2 tiny asparagus spears. I know I'm not supposed to for 2 more years but I did it. One for me and one for my sister. It was like spring exploded in my mouth!! We both agreed that it was the best thing ever.

Carrots! Used them in a stir fry last night, they were so good! Hopefully the next time I make stir fry I will have my own peppers and onions to add!

Salad from speckled trout lettuce, miner's lettuce, two purloined leaves from a red cabbage, Swiss chard, Red Russian kale, and two leaves from my treasured Tuscan kale patch. Added to this mix, the pinched-off tops of three kinds of basil (pinched to encourage a more bushy shape).
Mm-mmm, good! Even if Man of the House says it's rabbit food.

My first tomato was picked and given to my favorite neighbor who has been eyeing it. I am afraid my last cucumber will be picked in the morning as the plant is looking realy bad and nothing I have tried has perked it up at all it is a bush type and I think it is just the end.

Spinach, spinach, oh yeah, and more spinach. I should have lettuce by the weekend so salad time is near! Other than that, not much unless you count the pea sprouts that I grew in my kitchen in some vermiculite. Man are they tasty on a sandwich!

LOTS of spinach, a variety of other lettuces and radishes. We've been enjoying the broccolini which survived the winter. It's twice as big as the Packman broccoli I planted this spring. Been using lots of herbs too!

Sitting here listening to the rain that started just as i finished a harvest and eating the cupful of sugarsnaps that i found. I cut turnip greens, chard, spinach and some bolting bok choy. And 2 small onions. Almost fogot, 2 tiny brocolli heads cause thery finally formed and the plants are starting to go.

Besides my daily tomato sandwich (ok, sometimes twice daily!), today I had a salad with tomato and cucumber from the garden. Picked my first jalapenos and going to make salsa tomorrow!

Steamed beet greens with red wine vinegar; fresh dill to complement sauteed red snapper; home-grown parsley added to mashed potatoes (not home-grown).
Also harvested two asparagus spears and a few small strawberries. Those should amount to a small serving within a day or two--providing we don't get too much rain.

Made a nice green salad for my brother Kevin who build my TT today. It contained cucumber, bib lettuce, tomato, and purple pepper. Tomorrow I will have fried eggplant.

Tonight for supper we had a salad of mixed lettuces & strawberries from our SFG, Vidalia onions and toasted walnuts. Dressed it with an apple cider vinaigrette. Oh yeah...I also cut up some rotisserie chicken to eat in the salad! I took this pic before dressing it and adding the chicken.

Beautiful, Pattipan, beautiful! Obviously, you're doing everything right. We LOVE fruit with salad greens...everything from peeled, sliced orange, to mangos. Strawberries? sounds wonderful. Have you posted your salad and salad dressing recipe to the forum?
