Mama's Corn Bread (modified)
Due to modifications, this bread item almost qualifies as main dish material.
Mama's Corn Bread (modified)
2 Cups Aunt Jemima Corn Meal Mix
2 Tablespoons sugar or Splenda
1 1/2 Cups Milk
1 Cup Whole or Creamed Corn
4 Serrano Peppers (seeded & finely chopped)
1/2 Pound Colby Cheddar Cheese (cubed)
2 Eggs
1 Small Can Rotel Tomatoes (do not drain)
(adding ham or beef is optional)
1 Pound Deli Ham, pre-cooked/Sliced (diced) or 1 Pound Ground Beef (browned)
Sift dry ingredients. Mix in milk and eggs, blend well. Mix in remaining. Bake in large iron skillet or 13x9 casserole dish at 400 degrees for 30 minutes. Makes 12 servings.
