Multiplier spring onions

I have multiplier spring onions, and on the package it said that when harvesting you should pull from the centre of each bunch, to allow more space for the others to grow. When my husband has been raiding the garden, he's just breaking them off at the green part, about an inch above the soil level. Am I supposed to pull them from lower down? Should I be getting some of the actual 'bulb'? How do you harvest multipliers?
