Beets and Carrots Mess Empty Beets and Carrots Mess

This year I tried starting beet and carrot from seed. Problem is, it is a little early to set them out, because of frost, but they are now a couple of inches tall, and looks more like a string than a plant. My question is, do I start over or can they still be transplanted and produce? thinking

seeds are cheap. i'd probably reseed. i put seed in my garden last weekend. its too early, but i covered the area with plastic and i'm willing to let the seeds germinate when they determine it's the right time.

i've seen some folks have success starting carrots n beets indoors n transplanting them. Seems the trick is to use some sort of container where the bottom can be removed (something like a paper towel roll)

Beets and Carrots Mess Empty Why not forget them both

I don't want to tell you what to grow and what not to grow, but consider this. Those two crops will produce just one piece of harvest per plant. You will get one carrot (if it matures) and just one beet per plant. Both veggies are relatively cheap to buy and a little too high in sugar.

Why not try something that you can continue to harvest all season? If you plant greens, you can pull off a leaf here and there dozens of times. Check the prices of some of the expensive, nutrient-dense greens, like Arugula and Kale.

I would also recommend thinking about growing some perennial vegetables like Jerusalem artichokes and runner beans. They grow like weeds and will come back. You can grow the beans up the sun choke vines.
