I have some really pretty savoy cabbage plants in my beds. Here are the best 3 from two weeks ago.

I think I got them in a little late, even for MS, and as you can see they are just forming heads (It's been at least 45 days, and they were started from transplants). Who knows if they will ever fully develop, but they get an "E" for effort! My question is this: Are the outer leaves edible, and can a few be harvested for making stuffed cabbage without damaging endangering the final harvested head?

Yes I have picked outer cabbage leaves to use for stuffing and leaving the rest to continue to grow.

oooooh! So pretty! If it were me, I would take the largest leaves off, wash them and put them in the microwave for one minute. Then make stuffed cabbage. YUMMY!

Cabbage Conundrum Empty Quick update

I did, indeed, take the outter leaves. I blanched/shocked them, I made filling using a veal/beef/pork/lamb meatloaf recipe, rolled them and placed them in a sauce recommended by Barefoot Contessa (onion, canned tomatoes, brown sugar and vinegar). It was great. IN fact, our college-aged son LOVED it. I actually found the outer leaves easier to roll since they are basically flat. The shocking kept them vibrant green. I say give it a try if you have cabbage leaves to spare.

OH! SO glad it worked for you and the boy likes it! Large Brussels sprouts leaves work well too, but I put them in the microwave for a few minutes then put them in the cold water. With the BS leaves, they do need to cook a little bit longer at a simmer, but oh so good!
