How to can barbeque sauce?
So I am going to make a big batch of Hubby's famous BBQ sauce and I want to can it for some of out friends for Christmas. Any pointers from the pros here? I am not using the Ball Book recipe.

Do you have a pressure canner or were you going to use a water bath canner?

I would suggest finding an approved recipe as close to your recipe and follow any addition of lemon juice and canning time required.

Well I compared recipes with the ball book recipe and it seemed to be fairly close with vinegar amounts and mine also called for lemon juice as well so I feel fairly confident it will be just fine. I processed in a hot water bath for 20 minutes according to the BB! We are using some of it tomorrow so I didn't have to can it but I wanted to practice for the future. I only got 3 quarts. It tasted mighty good though! I only wish I had fresh tomatoes to use instead of ketchup. I put the recipe up but I will deffinately share Camp!! I just need to find where I put it!

3 cups Brown sugar
3 cups cidar vinegar
3 cups ketchup
6 TBS Lemon juice
6 cloves crushed garlic
12 TBS chopped onion
1 1/2 cups chili sauce
1 1/2 worcestershire
3 TSP Dry mustard
Simmer at least one hour or until desired thickness. This isn't the famous recipe because the hubs wanted to try something new but when I find the "famous" recipe I will share that one too!
