Mine started out a light yellow, and when ripe are golden. About the cream background color on this webpage.

I did have one of my plants that came out 1/2 zuchinni. An accidental hybrid that was very similar to Spagetti Squash.

Did I send you seeds?

My only spag squash fruit is hanging up in a giant rhodi shrub, but the vine just up and died the other day. The squash is between green & yellow at the moment. Do you think it will ripen hanging up there all by it's lonesome?

Spaghetti Squash color question Empty Squat's spaghetti squash-kudzu cross

Post  Nonna.PapaVino on 9/12/2012, 11:07 am

If you were gifted with some of Squat Johnson's spaghetti squash, I'll bet you, too, have vines running up to 25 feet, even up and over a deer fence, and you have monster squashes hanging all over the fence. Only conclusion I can come to is that he must hybridize squash with kudzu. And, as he indicated, they turn a most appetizing yellow color. So far, we have 10-12 squash turning yellow. Realizing with just the two of us, that's enough, I've been cutting off the small, immature squashes (no larger than my hand), and using them in any way one would use zucchini. Tasty in ratatouille, I can tell you. Thanks, Squat, now we just need more recipes for using the big ones. Nonna

ours started out light green, then turned yellowish and the harden and turn yellow. You might be OK. We only got 2, but they are good! One of my favorite squashes! Went to buy more seeds, and they were sold out. Shocked Sad

I used the spag squash seeds from a dinner I once had of a squash bought from the grocery. That's where that hanging spag squash is from. There were more fruits but when the vine got PM, they started to die off. Sad

I grew a normal spag squash and a mini spag squash. Some of them started out light green then turned yellow (big ones) and the mini ones started dark green with white stripes (similar to a watermelon) then turned yellow/orange!

@Nonna - glad to hear they are growing nicely for you.

@Llama - after looking at the pic, they do start out pale green, then yellow to gold. Mine are done for the year.

"No Carb Pasta"
I gotta throw in here my process. Puncture 4 times with a knife, bake at 350 in a shallow pan with 1/4" of water until a fork slips in easily. (around 30 min). Let them cool, cut in half, toss seeds, spoon out the "pasta". I put them in foodsaver bags and freeze.
We reheat them at will and add Marinara sauce, and sometimes italian sausage, parm cheese, etc.

Oh Good!!! Cheyannarach and SJ Thanks!
Then I'm happy again - I don't care if its midget size from the late planting, just need enough for me, hubs won't eat it, and it'll be the first one ever.

I have a feeling your spaghetti squash might make some great pie and Jack-o-lanterns in a few months!

LOL...I think it's really funny! especially since I BOUGHT the seeds! Spaghetti squash is my favorite squash, so was looking forward to more. We grew them last year. I lost about 45 lbs and the squash was a big part of my weight loss, HOWEVER...these look a little different Wink
