A Present from a Neighbor
OK, I just don't know where to put these photos. Recipes, compost or regional. This is what my grumpy old git of a neighbor brought to me tonight when I was elbow deep in doing a bee hive inspection.
Vegetarians beware!
These dressed out between 30 and 35 pounds each. He went fishing up on Lake Ontario for a few days. When I asked him what he was doing with the heads he thought I was crazy, he never heard of anyone eating fish heads.... Little does he know some of the best flavor is to be had from the end bits of a fish. So, into the canner stock pot they went. After all is said and done, the leavings will go to the compost pile.

I am happy for you. I grew up very near the ocean, suppose to love fish, but I can't stand the taste or smell of the buggers.

They have been simmered for a while, ate cheeks and some other meat with supper, the rest for stock. I love free supper.

It's kind of the way it is with beef too. No one eats the cheeks or tongue anymore. Very rarely do you ever see shanks either. I've asked when we have our beef processed every year. Nope. The butcher won't even do these items. The first year he did our briskets, he trimmed the fat cap off...WHAT??? He said no one likes the cap on anymore. To much fat! I asked how the heck are you supposed to bbq a brisket with no fat cap That just ain't right
