I couldn't believe I didn't see a panzanella recipe here! Okay, it's not so much a recipe as a method, but it's wonderful!

For each serving, gather 2 slices day old bread (I like a crusty baguette), 1 tomato, 5 or 6 basil leaves, four cherry-sized mozzarella cheese balls, a slice of onion, red wine vinegar, olive oil, salt and pepper.

Chop everything slightly smaller than bite-sized and put in a big bowl. Shake in jar twice as much oil as vinegar and toss with the bread. I like it slightly wetter than drier, so I'll use about a quarter cup of dressing per serving. Let it marinate for an hour, then season with salt and pepper and serve.

I make this for my family with a whole baguette that's nearly a week old so it's good and dry. The drier the bread, the more it soaks up the dressing and gets yummy! For company, I'll throw in some sun-dried tomatoes and roasted red bell peppers and use my basil flower oil. Mmmm.
