Using blanching water for canning? Empty Using blanching water for canning?

Yesterday I made peach salsa and blanched tomatoes and peaches. Peach salsa

Can I use the water from the blanching for the hot water bath? (Adding more to make the level appropriate with the canner?)

I didn't because I wasn't sure if I could.

I would think that some sugars from the tomatoes and peaches would be in the water and could possibly attract ants or some type of insect or rodent while the jars are in storage. If you washed the outside of the jars when you were done it would probably work.

personally i would not use the blanching water for this purpose because of possible syphoning. however, when i can i always have two pots on at a time anyway, because i use the canning pot to heat the jars before filling.

Thanks. I purchased a 21 qt canner and it takes a long time for that hot water to heat up.

I added the blanching water to the compost bin.
