wow!! healthy looking for SURE! congrats! I usually just pull "down" on the stalk near the main stem, and it snaps right off.

Yeah, I just snap off some of the very bottom leaves near the stalk. The older ones go into the compost, the more tender ones are edible.

Come end of the sprouts . The tops can be eaten when lightly boiled and smeared with a bit of butter and a shake or two of pepper.

An excellent question!!
Break off the top now to remove the flower. This will force the lower growth where the sprouts are.
You could also give them a light sprinkle of dried blood around the roots, the nitrogen will boost the foliage growth. Remember, a little goes a long way.

They usually fall of their own accord , first they go a bit yellow ,then droop ,then fall leaving the sprouts for you to harvest from the bottom up , as the plant grows the effect will move up the growing stem .
Though to prevent the harbouring of pest insects it's best to gather the fallen leaves & out them to compost , some folk snip off the leaf close to the stalk once it turns yellowish

I forgot to add...
Iif you remove too many big leaves on a stalk before they are naturally ready to drop the sprouts tend to open up ( become blown ) and take the place of the big leaves in doing what the big leaves would normally do .

A neighbor of mine took all my Brussels sprout leaves and cooked them as mustard greens(along with cauliflower and broccoli leaves. They're all in the same family and taste the same, at least according to her).
