Beets Empty Beets

I am a newbie gardener. I tried growing beets but all I got were tops. The beet roots failed to develop.

I pulled the greens out and we ate those. We didn't die so my fears about that are calmed, but I am hoping to try this vegetable again. Does anyone know what I did wrong?

I wonder if they just weren't finished yet? Mine 3 crops, planted at different times, haven't made anything yet I don't think. I'm expecting them to show above ground like radishes do, but maybe they don't.

Can someone please tell us how to know when the beets are ready?

The green parts were falling over and scrawny. Maybe that is how they are supposed to look? But everything else looks so strong next to those squares. I confess, I've never tried them (or even eaten them) before. This is a bit of an experiment for me.

At least the greens were tasty. Smile

In the book it says seed to harvest is 8 weeks.

My beets started showing shoulders so I could see some were about golf ball when. The greens were nice and crisp and healthy and very tasty. The beetroot still didn't impress me. I managed to eat some of them by peeling, slicing and marinating the raw beet in balsamic vinegarette salad dressing and adding to a salad.

It looks like this year is going to be a good beet year here.
As to what may have gone wrong....beets take quite a bit longer to make the bulb root... Mine take about 3 months, sometimes longer. The other problem that comes to mind is the spacing. I thickly sow my beet seed but thin the plants as they get bigger, harvesting them for greens. I usually try to space the remaining beet plants at about 1.5-2 inches apart, to allow for root growth.

beets take a while to form...I like to plant them where they will receive shade in the heat of the summer (under tomatoes or cucumbers). Beets also like plenty of water and a little wood ash mixed into the soil (from a wood fire pit or campfire)...I think they like phosphorus. This has been a really good beet year for me.
