Santa brought me a Primo Oval for Christmas. I'd never heard of them. My told me it was a smoker; I thought that was kinda odd 'cause I haven't thought of smoking anything since my college days! thinking

So I really started from ground zero. I do a cook once a week, but I haven't worked my way up to the expensive meat yet. I'm tryin a sack of ONO lump right now; it smokes more than others I've tried, which I like. But it sparks real bad when I light it with the weed torch.

Anyhow, anybody have any great recipes, techniques, recommendations, favorites, accessories, etc to offer a newbie?

LOL the forum is the reason I decided to keep it! Those guys are too good! I've tried some of their 'can't go wrong' advice, and wasn't all that impressed.

Oh dear! Well, I wish you the best and be assured I am a wee bit jealous. A smoker is on my list of wishes, but first is a power snow thrower, because the next snow season is just 7 months away! Very Happy

Boffer, I will convince my husband to sit still long enough to share some info.

Is this your first smoker, or have you had other types? What have you tried smoking? What have been your successes, failures, questions?

And, yeah, now my mother-in-law asks my husband all the time, "Now what are you smoking?" Jeesh, when is she going to get over that??? All that was a looooong time ago! Any Ceramic Grill fans out there? 926169

That's just it, it's not reeeeally a smoker. Could be, but not easy to keep the heat low enough, long enough. My wife was trying a little attitude adjustment!

I used to be a maestro on a Weber kettle, whole birds, roasts, etc. Then one day I couldn't keep the charcoal going long enough to cook a steak. I tried new charcoal, different brands, even borrowed another grill-same thing, I couldn't keep the briquettes hot. I finally told my wife I was going to buy a gasser. Instead, she took it upon herself to learn how to cook steaks and burgers. She didn't have any problem using the same briquettes I couldn't keep hot. So she's been doing the grilling for 10 years now. I guess my karma or force field or something had changed!

Either she's tired of doing the grilling, or was desperate to find me a surprise Christmas present (was I ever, didn't even know what it was!).

A ceramic grill is ideal for long, slow cooks, (20 hours) for stuff like pulled pork. A lot of folks use them in BBQ competitions. It uses lump charcoal rather than briquettes. Getting good on one is more art than science, and it's a long slow learning curve. Lots of variables to play with: from temperature, to time, type of lump, wood additives for smoke and flavor, to seasonings, direct and indirect and combinations of both, and on and on.

At the forum camprn mentioned, they get into the details alright, darn near need to have majored in cow and pig anatomy to be able to talk to the butcher to get exactly the cut of meat you want!

I'm hoping someone on this forum can offer ideas ala SFG. Step 1, step 2, step 3--success! rahrah

Suggest you check out http://www.komodokamado.com/forum/ and do a search on Digi Q II temp control unit for low and slow cooks.
