"food safe" wood fasteners? Empty "food safe" wood fasteners?

We're making our first couple of SFG blocks out of some nice locally sourced 2x8 cedar. I went to get some lag screws to assemble them but then I got to wondering if hot dip galvanized fasteners would leach anything nasty into the garden? The store had 18/8 stainless steel....for literally 5x the cost! Only other options were galvanized nails or zinc coated screws.

Thoughts?
