When to Harvest Herbs Empty When to Harvest Herbs

Mel has a few herbs in his book, but I've planted more than a few (!) and need to get best-practice advice on harvesting them. Any other herb-related advice is also welcome....like how you like to dry/store/use them!

Here's what I have planted:
mint (peppermint)
basil (lemon)
sage
thyme
rosemary
cilantro (ah, YEAH I like salsa!)
lavender
oregano

what a list

Basil I am always picking leaves off of, and pinching any time it tries to bolt
best if picked before it flowers, taste starts to go down when it flowers. now saying that, it reseeds itself real well if allowed to flower
Rosemary is a perennial, once established just harvest when needed, I will cut falf the plant of and dry it out and the cop it up
Sage, Oregano, thyme and such I just pick as needed and pull the plant at the end of the season, oregano is great fresh, but it actually has more flavor when dry.
Cilantro and Parsley I cut all the way to stems and it always seems to come back, dry it out and cut it up, I also will pick fresh all the time

never grown mint of Lavender. sorry

as far as drying them I guess there are several methods, I think tieing them and hanging them is the most popular but I put mine n a plate and that way I can turn them and make sure they do not bunch up and have moist spots, when dry I usually dice them after separating them from the stems

One thing I like to do with rosemary is pick it fresh and skewer some shrimp on the staks with all the little leaves on it, and put them on the grill, yummie good Smile

harvest continually or your herbs will go to seed when they are done. when i harvest, i actually take cuttings from the plant, use the lower leaves (for cooking or for drying to store), leaving the upper set of leaves intact. then i root those cuttings and make new plants. right now i have cuttings of basil, lemon basil, lemon mint, spearment, rosemary, and lemon verbena. in a few days (when the weather dries out a bit), i'll take cuttings of lavender and cilantro.
