Why Do We SNIP?
Thinking of lettuces in particular and 'cut & come again.'
Why do we snip instead of tear?
We tear lettuce for the salad bowl. If you use steel with certain lettuces, it causes the edges to brown. Not pretty for dinner!
So why do we snip? Shouldn't we tear instead?
I noticed a white ooze coming from the snip (and all my cutters are some sort of steel). Memories of training from restaurant kitchens brought this question immediately to mind!

I don't tear leaves off the lettuce plants growing in the garden because
1) Using a scissors to harvest leafs of lettuce causes less damage and stress to the growing plant.
2)It is much less likely I will inadvertently pull the plant out of the ground by harvesting leaf lettuce with a scissors. (Yes, I have done this on more than one occasion).
The white liquid is the sap of the plant.

That is what I would have said but Camp said it better!

Since steel against the lettuce causes oxidization (bad), I would think tearing would be easier. No mis-cuts to the other leaves, etc. I've watched for white sap with tearing but haven't seen any yet. I get the leaf I want, and no damage to other leaves.

I have used very fine scissors for both spinach and basil for several years.
For me it is a sort of ritual, .. go out with the red colander and my fine hair cutting scissors and snip the spinach etc.

Once my lettuce is in the kitchen, after it has been run through the spinner, then I am careful how it is handled, no knives. Out in the garden, I want a clean cut that quickly heals so the process of regrowth can begin.

I don't. I sort of snap the leaf stem for spinach and snap the centre stem for lettuce leaves and the rest of the leaf tears right off. If you use one hand to steady the plant below where you snap then there is little risk of yanking it out.
This winter I've been buying small lettuce sold in little pots. I put them in the kitchen window and just snap off a few leaves at a time.
