When to determine hours of "full Sun"?

I have always wondered at what time of year the 6-8 hours of full sun is measured? My garden space is close to a row of trees to its South. Thus in Early Spring and Fall as the Sun gets lower in the sky, my garden starts losing that 6-7 hours it gets in May-Aug.

I assume the hours of full sun are measured from the sprouting, to harvest of each specific plant?

Trees are a pain. Certain veggies require direct sun or they just won't grow right, ex: okra, grows well in the sun, but put it in the shade and it will just sit there waiting for the sun. Heat somewhat makes up for the sun. I put my garden beneath a lg. pine, to get the shade to help with the heat. I just put veggies that need full sun on the outer edges.
