If the poultry compost is well aged/rotted or a commercial bagged product then it can be used in equal parts with the others. I considered Black Hen brand chicken to be one of my 3 work horses in my MM along with mushroom compost and Black Kow. I do add smaller amounts of worm castings because I don't have much.

It sounds like you have found more than the 5 composts need. 5 should be considered the minimum so you should be fine.
Just check the ingredients on all of them. If any have peat in them, particularly near the top of the list, then you will need to cut back the amount of peat you add. Too much peat will cause problems.
I find the ecoscraps intriguing I would definitely use that.

Something I just thought of to do and I made a phone call and it worked. I called a lady whose daughter is in 4-H and is selling rabbits. I called and asked if I could get their rabbit droppings. The rabbits use litter boxes so it is a mix of poo, urine and the bedding. She has a half a recycle container which I think may amount to about 20 gallons. Boy that will be strong stuff but will be a great addition to my other compost ingredients. It's something to consider.

I'm just adding this here for anyone in the future that might be looking to fill their boxes in the Houston area. In my opinion Houston Garden Center can be a waste of time; they are like the Wal Mart of gardening they have a lot of stuff but most of it isn't all that good quality.
Cornelius Nursery has two locations in Houston and that is where I bought vermiculite and two types of compost. I think they have more than just those two.
Buchanan's Native Plants is in the heights. I know they have worm castings and several types of compost. They also carry Lady Bug brand products and Lady Bug makes their own certified Mel's Mix

I don't know if Buchanan's keeps the SFG blend in stock but I'm sure they would get it if you asked. Buchanan's also has a good selection of organic gardening products in their shed.
*It may sound like I prefer Buchanan's above Cornelius but that is not my purpose. Buchanan's is between my home and office so that is where I go if I need to get something on my way home. Cornelius may carry everything that Buchanan's does; I'm not sure.
Both these stores have a nice selection of plants and seeds that are better than Lowe's, Houston Garden center and other large retailers.
