Pickles Watermelon Rind
Does anyone have experience with which type of watermelon makes good pickles? I searched the forum and didn't find any pickle posts. I've been wanting to make some for years but we haven't had a garden and I'm concerned that the melons at the grocery stores are like the cut flowers that are beautiful, but have no smell anymore--the melons are small and perfectly round, but came at the expense of losing other characteristics typical of garden-grown varieties. Okay, I agree this is probably backwards--discussing the rind instead of the flesh--but the flesh will be gone within 15 minutes and the pickles will last a long, long time (especially if my kiddos don't like them).

Arizona is one of the top producers of watermelon. I would think you would be able to find plenty of quality melons at your farmers markets or roadside stands.

In addition to watermelon rind pickles which my mom made, I made a watermelon rind marmalade. This was years ago and I used an lemon marmalade recipe to concoct my "new" flavor. Kids liked it on peanut butter sandwiches.
