Fresh Parsnips for Thanksgiving!
I picked them today, some parsnips to make a platter of roasted veggies on T-Day.
The largest one on the far right was difficult to extract from the ground. After much tugging and twisting, I got most of it, but as you can see, the bottom section is still in my garden. Nonetheless, these will taste good on T-day and all the sweeter after the evenings being below freezing for several days..

Oh YUM!! I love me some parsnips!! The kids call them licorice albino carrots.
