Hi,
I have a small canning set. It will do 3 jars at a time. My Mom has taken pity on me and given me a much larger pot and rack set up. I cannot decide if I should use it. My question is "I have an older enamel pot, it has a few chips in it. Is it safe to use as a water bath canner?" Thanks for the help.

A chipped enamel pot is fine to use for water bath canning, as it is just a vessel for boiling water and creating steam. Any pot with a lid and a rack will do.

If it were a pressure canner, regardless of material, and had dings or chips of any kind, I would definitely say no.

"Antimony is a metal which is found in enamel and can migrate into food from chipped enamel, especially when used to store acidic food. Antimony can accumulate in the body and cause damage to the nervous system." I think the chipped enamel warnings are aimed more at roasters and such where the to be eaten food touches the open wound in the pans enamel surface for an extended time during cooking. Storing food in something with chipped enamel would also be a no no.
