What to do with one Patty Pan squash? Empty What to do with one Patty Pan squash?

I just harvested my first Patty Pan, which is a new veggie for me, so I've never cooked with it or tasted it before. I'm thinking to slice and saute it, but should I add it to a Sheppard's pie, or to the eggplant French Bread Pizza, both of which I am preparing tonight, or should I set it aside and wait for another one or two to make a separate dish later?

I think the saute idea is best, salt, pepper garlic, a bit of Parmesan,,, oh yum!. It is summer squash so it would disappear in the casserole and the shelf life is limited. Enjoy! Patty pan is one of my favorites.

If you have other squash that are ripe, (yellow, zuchinni) make a squash medley. The Irish flag, green, white and gold. Very Happy
saute in a bit of olive oil with salt and pepper is the simplest.

I wound up putting in my pizza, along with two small ichiban eggplants and an onion. It was delicious. Can't wait to try more. I hope this bush turns out a lot of squashes, since it is taking up so much room!
