Mamma's Hashbrown Cassarole..
Mamma's Hashbrown Cassarole
This is a perfect side to feed now, freeze half for later. It reheats super great! Our family loves it.
32oz frozen cubed hashbrowns (or make your own...duh SFG'ers are self-sufficient, right?)
1 can cream of chicken soup
10 oz sour cream
2 sticks butter (16 Tbsp)...melted
2 cups shredded cheddar cheese
2 tsp salt
1 tsp pepper
2 cups crushed corn flakes
optional: 1 cup chopped onions (hmmmm, maybe texas sweet?)
Thaw potatoes and dry with paper towel. Mix all ingredients together, except corn flakes. Place in buttered/sprayed 13x9 baking dish. Bake @ 350*F for 30 minutes. Top with crushed corn flakes and continue to bake for 15 additional minutes. Let stand 5 minutes and serve. (Leave uncovered entire time while baking)
Of course, the proportions can be modified to taste. My mom uses less butter, more sour cream and cream of chicken. However, Momma (my wife) likes her butter. Try it both ways.
