Gauging onion size vs. cooking measurements
Here's a nice video which may help you guesstimate how big of an onion you'll need to produce a certain amount of chopped onion. Bottom line is, a single 1 pound (454 g) onion will give you roughly 2 cups chopped.

LOL! I really don't measure either, except when canning... but I thought maybe someone might find it useful.
Re: Gauging onion size vs. cooking measurements
Megan,
This is perfect for my husband, "the engineer"! This is right down his alley. He has learned so much cooking since we first met. Back then in college, a great meal for him was a cooked meat patty, a can of Veg-All, a can of baked beans (or serving of Instant Rice or serving Instant Potatoes). He was scared to "cook". I showed him cooking by recipes was nothing more than Chemistry Lab (mix this with that, etc).
When I was on months-long bed rest with my pregnancy with our daughter, he stepped up to the plate. I would find notes where he made "timelines" to get dinner on the table all at the same time.
So, Bob thanks you and I thank you. This is great!

Re: Gauging onion size vs. cooking measurements
Welcome, Jane! Glad it was helpful. Here is another good website: http://www.foodsubs.com/ It is a wonderful thesaurus for cooks. You can look up foods there, see what they are used for, and how to find a good substitute if you don't have a certain thing on hand. Lots of fun browsing there.
Re: Gauging onion size vs. cooking measurements
Megan, this is also a great website! I'm bookmarking this one, too. Hubby needs this outside help. After 30 years of marriage, if I tell him "blah, blah, blah", I'm bossy. So this is independent info (and great!).
