Garden Confetti Macaroni Salad
Garden Confetti Macaroni Salad
2 cups whole grain elbow macaroni (about 8 oz), such as Barilla Plus
1/2 cup mayonnaise (Hellmann's Light)
1/2 cup nonfat plain yogurt
2 tsp Dijon mustard
1/4 tsp salt
1/4 cup Splenda (granular type, or use half or all regular sugar)
2 Tbsp cider vinegar
Dash freshly ground black pepper
1/2 cup chopped red bell pepper
1/4 cup shredded carrots
1/4 cup onion - finely chopped (or green onion)
2 cups baby spinach, roughly chopped
1 cup sugar snap peas, blanched and cut into 1/2" pieces
Cook macaroni according to pacage directions, rinse with cold water and drain. Mix together mayo, mustard, sugar, vinegar, salt and pepper in large bowl, combine with macaroni and chopped veggies. Chill at least an hour or two...longer is better. 6-8 servings.
Other possible add-ins: Chopped broccoli florets (in place of spinach), shredded or cubed cheddar cheese, celery, halved cherry or grape tomatoes, cubed cucumbers, chopped sweet pickles (or relish), diced hard-cooked eggs, frozen peas (cooked 1 to 2 minutes in microwave), steamed green beans (cooked just till tender), cubed ham or turkey.
