So I grew these beans...
and now I have no idea what to do with them!!
They are yard long pole beans, and at first I was eating a handful each night fresh off the plant while I mosied around my garden...but now the plant is EXPLODING! And I probably have 10 X this many as in the photo below ready to do something with them.
This city girl needs your help...NOW WHAT??? How do you cook these things? HELP!

I forget, MM, were you going to learn to can this year or next year?!
We just steam with onions, add a little lemon juice and pepper, and a dab of butter.
We prefer to pick them before the seeds get so big, but you should pick them when they taste best to you.

totally. I do butter and garlic, or butter, salt, and balsalmic vinegar, cheese, roasted, sauteed with other veggies, yum yum yum!

EEK Boff, great idea! I have some lard from a pig a friend quartered and made cracklin's!

If you have too many to eat the easiest thing is to freeze them. Lots of info online but basically just cut to preferred size, put in boiling water for 5-8 minutes to stop the enzymes action and then strain, lay out on paper towels and pat dry and put in freezer bags sucking out as much air as possible.
And for cooking I like boiling them in a little water with basil and garlic. Or just plain boiled.

I've never grown yard long beans, but....aren't they way shy of a yard?!

totally short of a yard....but ok to eat young. So the seed pack said. I didnt want to wait until the all died in a frost or something and not get to eat any. Ok so I'm impatient. LOL

I pick mine about that size too. Letting them get too long they get REALLY seedy.

We prefer to eat them when the seeds are smaller, regardless of size. It was Weedless in Atlanta who said not too long ago: 'size doesn't matter'!

Looks GREAT, MM! Mine are much too stringy when the seeds get that big. I am letting the big ones go for shell beans (unless I feel like trying to make shelly beans). Last night I finally got enough of them picked smaller to make my first batch of Dilly Beans! Woo, hoo!

I usually cook those the same way as I do asparagus ... butter, garlic & a pinch of black lava salt ..... saute them until just before they start to go limp (Ilike my veggies crunchy).
If I'm using them as a meal instead of just a side dish, I'll add some quartered portabello mushrooms & thin sliced red onion (just a little).

My favorite recipe for fresh beans is minced garlic, fresh dill, and a splash of lemon juice.

(Actually, I was pretty impressed this year - out of about 75 tomato plants, I knew what at least half of them were by the time they bore fruit!)
