Here is a link to another of my favorite eggplant recipes, Baba Ghanoush, which is a Middle Eastern eggplant dip similar to hummus only made with eggplant instead of chick peas.

Fun to grow eggplant beauties and we often find that folks do not know what to do with them.
This is another easy recipe - cutting the eggplant in half, roasting in the oven and going from there.
Pair it with some local farmers market bread or better yet - your best homemade bread!

Baba Ghanoush Empty eggplant ideas

I've never noticed seeds either.  Could your eggplant have gotten to mature? 

One of our current favorite things to do is marinate slices (crosswise or lengthwise) in either olive oil, parmesan cheese, garlic flakes and other herbs and then grill them on the barbee, or throw them on the barbee and brush them with a mixture of balsamic vinegar and olive oil and herbs.  

Since the rest of us do not notice seeds pick some of your babies earlier and see if that solves the problem.

Baba Ghanoush Empty Eggplant everywhere

This year I am renovating my garden area so did not plant much. However, there are eggplants sprouting up all over the place. In the crack in the sidewalk, under a tree, in a flower pot, everywhere! Who plants this stuff??!! Guess they escaped while I was cleaning seeds to trade. Oops! Embarassed

Love the stuff. I prefer to use the long skinny Japanese eggplants that have small seeds. Rather than just char them up on the BBQ, I briefly smoke them with some oak wood chips, lube them up with olive oil, and them finish them off at a higher temp indirect on my Webber.

CN, Try spraying the blossoms with apple juice to get them to set. The juice gives off ethylene gas which stimulates the plant's into setting fruit. I've used it on stubborn tomatoes (same family as eggplants) that won't set because it's just too cold at night- even works on orchids!

I forgot, if eggplants are like a majority of the Solaniums (NIGHTSHADE!!!) family, they tend to give up fruiting when the temps are higher than 90 degrees. That may explain why Countrynatural's plants are not producing. Shade then so they are not in direct sun between 10 am and 2 pm and see if that helps.

YS,  You may be right.  My eggplant is shaded except for early morning and keeps on producing.  Husband did not pick up tahani and a lemon, so I'm just eating the roasted eggplant.

I think my (Japanese) Millionaire eggplants are too sweet for this dish. I had 2 pounds of them and thought I would try them. Nope, better as roasted and eaten with the skin on.
