New restaurant featuring organic aquapontic salads.
Yep, had to wrap my head around that one a bit myself. When I drove up to one of my favorite restaurants that's opening a new organic eatery featuring coffee bar, organic everything and Aquaponic salads.
Checking the web, yep, the USDA National Organics Program is certifying hydroponic and aquaponic systems are "organic".
Not really what you think of when you think organic is it? Lettuce grown in floating trays of peat balls in a stream of recirculating watery fish bleep.

NSR, I'm sure they rinse the lettuce. I bet the salads are fairly expensive.
