You really should try this version but if you cant even the box mixes you see now adays are wonderful with shrimp the trick is not to cook them too long.

Thanks Sanderson as ya know I aint too good at categorizing.  This truly is a wonderful dish and great with any seafood.  If you don't want to try it from scratch there are several good box mixes available like Zatarain's  for instance of course the made from scratch version is mo betta.  Like us Cajuns say. Tony was a wonderful ole man the life of the party and could always be found in the kitchen taking notes and picking the cooks brains.  Sadly every since they came out with all their mixes and instant box meals we cant use their seasoning.  It gets contaminated from the flour in the building now and aint gluten free no more.  So we took the recipe for his seasoning(yes I have it Razz) and adopted it to our taste same ingredients just balanced more for us that's what we use in cooking now.

I could tell ya lots about him he was a real person that lived in south Louisiana.  he was a friend of my grandfather and father and I remember his as well.  His original cook book in my opinion is the most authentic book out there on Cajun fare.  Sadly he is no longer with us but his family is doing good with his business.

His original cook book actually came before the seasoning.  Friends pressured him to sell the seasoning telling him ya sell some one 1 cook book but they buy seasoning every time they go to the store.

A po boy is basicly a cajun sub style samage made with french bread.  The bread is flakey on the outside and kind of tough on hte inside able to stand up to most any ingredients.

At the corner gas station you can get one for 5 or 6 $ depending on ingredients and they are big.

Oh boy, does that sound good! Still chilly around here, and a nice hot bowl of jambalaya would be really nice for lunch. I'm gonna have to add a few things to my shopping list. My mother was French Canadian from New Brunswick, and told me that many of our relatives were among those forced out by the British, and ended up in New Orleans. So maybe that's why my taste buds get up and do a dance when I see those homey, Cajun dishes. It's in the genes. Very Happy
