I chopped up a bunch of buttercrunch, romaine, collards, kale & chives today for the weekly lettuce pack. Tonight we're having sauteed Rainbow Chard along w/ a spinach salad with scallions to go with our store bought sweet potato.

Asparagus - finally ! Started them from seeds (about 20 plants) in 2011 (or was it 2010 :scratch: ? can't even remember any more) and now we can are enjoying our first harvests. It seems that everywhere I read it said it would be too hard starting from seeds, but really I found it was pretty easy and germination rates and transplant success was just as high as any of the "easy" crops.
Also had our first cups of lemon balm tea last night.
Unfortunately it looks like it will be 2 or 3 weeks until we can eat any of the annual vegetables .

Oh, I am coveting those for sure! We have TONS of strawberry blossoms and a few green berries starting to form. Gives me some time to get these blasted slugs, pill bugs and ants under control to make sure I get the first berry!yolos wrote:A big bowl of strawberries.

We had big salads with various lettuce, swiss chard, and spinach from the garden (everything else was store bought) and oven roasted asparagus (tossed in olive oil, salted, fresh cracked black pepper, and garlic). It's great to have garden season here!

I've been munching on the flowers of my zucchini and squash plants and also my parsley, when I'm out in the garden. Today I ate some of the bok choy. But I'm not getting enough yet to make an actual meal. I swear though, that is the best parsley I have EVER eaten. I love parsley.

I can't compete (yet) with that beautiful bowl of strawberries, but I did eat the first 3 berries of the season and it is a decades long dream come true to walk out back and pick my very own strawberry babies.

asparagus! and tomorrow, we will use the new celery in my husband's Court Bouillon. Also, my spearmint is up and ready for tea, as is the bee balm and lemon balm and catmint.

Also, another bowl of strawberries. Question - can I wash these and then just bag them and stick them in the freezer. I don't have time or effort to try to can them. I need to make a table top sfg to grow strawberries. It was a lot of work reaching into a 4 x 8 bed and harvesting them. I kept thinking of LM and her table top strawberry bed the whole time I was picking.

Think people say to wash and place on a cookie sheet to freeze, then bag them for storage in the freezer. Can anyone else confirm this?

Strawberries. For freezing, the cookie sheet idea sounds good. You could also slice and dry them. Great for snacks or tossing in a salad. My husband built 2 boxes for me last summer that I could place in the sunshine.
They were quickly modified by making both the fronts and backs full screens to increase air movement. During winds, I covered with thin material to keep out the dust.
The strawberry slices stuck to the screens so I started lining with parchment paper.

I visited a genius gardening neighbor yesterday who was in the process of freezing Redheart strawberries.
Her method, indeed, is to wash and drain them, then freeze on cookie sheets and store in freezer bags.
However, she cautioned to make sure the bags seal properly, or a lot of frost will form on the berries.
I've used this method myself.

I had a big smoothie for lunch with mint, kale, parsleyand spinach with blueberries.threw in some store bought pineapple and strawberry to complete
Dinner was grass fed local beef, carrots with ginger brown sugar glaze, green Beans with garlic and onions, and english peas and a Buttercrunch and swiss chard salad all from my garden.
I will plant more peas this fall they are awesome!

Sauteed green chard, snow peas, turnip greens, bok choy, lightly salted. OM Goodness - didn't know how much better 20 minute old produce was compared to stores or even farmer markets.

I would not wash before freezing. You will lose some texture from the freezing process and they will be more "watery" than fresh berries when you thaw them. I lay them out on a cookie sheet to freeze then vacuum pack them in 1-2 c portions. I rinse and blot dry after thawing or if using them frozen just give them a quick rinse.
