I printed the recipe that Plantoid posted for green tomato chutney yesterday and left it on the kitchen counter. My better half saw it and gently informed me there will be no more chutney's until I reduce the amount of apple and peach chutney currently in her pantry. I filed the recipe and put away the canning stuff until next year.

The peach maybe but the raisin haters apple is too savory. I went way overboard last year and my friends are tired of jars showing up on their front porches.

For anyone in the UK .
I've run out of sensible wide mouthed canning /bottling jars & couldn't find any within 20 miles .
I happened to drive past" Wilkinsons" , they didn't have any either , driving home it struck me that they might have them in their on line shop .
So on getting home found that Wilko.com the online part of the store does indeed have the clip over Kilner jars available in various sizes plus they also have other types of preserving canning /bottling jars .
You can buy on line and providing you spend over £30 each time they will deliver free to a store near you for you to collect or charge for a delivery to your home ( several delivery options available ) .
Best thing of all is they are a fraction of the other internet or shop prices .

Made 36 jars of raspberry jam Sunday. All the berries came from our little 3x15 raspberry patch.
Made 19 jars of red pepper jelly and 7 jars of roasted garlic jelly yesterday.
Today is more Salsa. Should get about 28 8oz. jars out of this batch.
The canning cupboard is really filling up!

Today was 4 pints of pickled grape tomatoes, yesterday 4 pts apple butter. Tomorrow should be the last qt jar of applesauce. Over the past couple of weeks the kitchen has gotten a workout like never before.

I have been dehydrating most of my extra Tommy Toe tomatoes. Added some fresh basil and they have my kitchen smelling so good.

We picked up the 14 x 1/2 litre clip over canning jars this afternoon , after unpacking them I soaked off the labels and put them through the dishwasher on a very hot cycle in readiness for sterilizing some for hot water batch canning all the rest of the crystal lemon cucumbers tomorrow
About 15.00 I spent 1/2 an hour or so using the mandolin to slice up nearly 10 pounds of the cucumbers and sprinkling cooking salt over each layer as I laid then in lidded glass bowls to bring out the water as they stand over night ready for rinsing off the salt , blanching , packing and HWB canning tomorrow .

Two more meals worth of stuffed peppers ready to vacuum pack tonite when I get home. That makes 9 meals worth so far and still have peppers coming on.

Today I made just over 2 & 3/4 litres ( 5 & 1/2 pint approx. ) of chutney using real sour cooking apples , green & red tomatoes , a couple of green & red capsicums , some fresh root ginger , a small whole bulb of minced garlic , loads of minced onions , raisins and a pound of light Demerara sugar & 80 gram of salt .
Instead of using malt vinegar I used 6 % spiced white diluted to 3 %
Then when simmered & stirred for 2 hrs. or so hot water canned it all , save for two awkward jars .
This is the third & fourth failures at HWB canning & pressure canning this year using KILNER JARS with approved butyl rubber seals & clip over glass lids .
Though as they are brand new jars with clip over lids, I'll have a play tomorrow and see if I can can plain hot water after " adjusting " the wire clip over clamps to make then clamp a tiny bit tighter & prove the jar & seals integrity .
Here is the pan pictures with about another hour of simmering to go
This next picture is the actual bottled batch ready to go in the HWB .
My recipe says there is no need to HWB so long as the chutney is scalding hot when put in to preheated sterilized jars . I like to be on the safe side ......... for your a long time dead:lol:
We test tasted the some that had cooled & set on a plate in the fridge .. very very nice , not as acidic and strong as a malt vinegar chutney would have been
Now all we have to do is sit and twiddle our thumbs till 21 Dec when it will have matured and developed into something really beautiful .

It will be a ham salad with hand carved sweet cured ham , our own lettuce & hopefully some kohlrabi sliced fresh , our own sweet pickled lemon crystal cucumbers , the chutney ,a hard boiled egg with a teaspoon of Heinz salad cream and a sprinkle of curry powder on it , a shop tomato , some chives and chopped raw onions frrom the garden and a chunk of red Leicester cheese with a warm roll or slice of home made bread ..made with 50/50 white and whole grain flours.
It's for my birthday treat .
This meal is what we know as a ploughman's lunch . Though I'll give the traditional pint of homemade still cider or beer a miss and have a cup of milky white tea instead .

The snow is coming down again and I just picked the last of the beets to pickle! Sure would be nice to have help, beets are a pain! They are sooo delicious though so it makes it worth it!

Arrrragh and ARRAGH loudly ,
Out of five hot water bath bottled Kilner jars with clip over lids four have failed to seal correctly, some failed within the first couple of hours when cold .
I re canned asap after re boiling the contents for 8 min in a big pan & putting filling up new jars using new lid seals then HWB'd them for 25 min so should be OK all jars are now safely sealed.
whilst I was sterilizing the new jars & seals I tried to find out why so many jars would fail ..was it me , the seals or something else.
I ruled out me for I've successfully canned loads of things . I ruled out the seals for I've used six packets of six brand new seals some worked some didn't , on looking at all the failed to seal and new ones with a x10 magnifier I couldn't detect any fault.
That only left the jars , the lids and the over centre clip down arrangement.
I got a sheet of frosted glass and set the wire of the clips on it & compared them against some I knew had successfully sealed , on checking with a calliper everything matched up Ok.
That only leaves the lids and jars then.
I found that a seal face on a lid fits nicely into the top of a ceramic ramekin dish so I used the glass sheet to check the trueness of the rim on the ramekin dish .
Lovely not a even a single thickness of grease proof paper could be slid under any part of the dish rim
I then checked out all the glass lids using the ramekin dish .. one failed with almost 1/8 th of an inch distortion on the sealing face. .. that's almost the thickness of the butyl sealing bands
When I checked out the difficult to seal jar bodies I was hugely dismayed to find that I have nine jars with just under 1/8 th of an inch distortion on the rims . The rims look like hammocks ( well not so pronounced but you'll understand where I'm coming from ).
There is no way I cold ever seal the jars , there was a clue to all this that I didn't realize what it meant.
When canning up some plain hot water to see what happened in the HWB I noticed that some jars were expelling a long thin continuous stream of air on one side of the jars. This is where the air was easily escaping when hot water was in the jars.
I took the jars out as soon as I noticed the bubbles and carefully noted where on the rim it had come out .
Sure enough every time it was at the lowest point (of the hammock) of the rim where clamping pressure on the band would be the least or non existent .
I've now contacted the Kilner customer service people and sent them some pictures of the problem .
I'm awaiting their reply as to what they are going to do to resolve the problem.
Moral of this long saga :-
From now on I'll always check the trueness of the glass seal faces if I ever buy any more canning jars ..... no matter who makes them .

I shall go forth and check my jar rims for such among those that I notice have not been sealing correctly. Using bands that screw down, thus pulling the band into fairly equal sealing pressure/contact all the way around, I am less concerned about them. But the jars them selves, especially among the smaller wide mouth jars that I use for gift size salsa and jams, those could use a checking with a pane of flat glass to make sure they can seal properly.
