We've got 7 raised beds, each are 3' x 15'. A few of the beds will have all "vertical" crops (tomatoes, cucumbers, melons, etc).

For example:

So, for those beds, do I need two trellises (on the inside rows, where the plants on each side would share the trellis) or three trellises (one for each row)?

you say you have 7 beds. Can you put all of your taller plants on the back of some of the beds instead of putting all tall crops in one bed? I think you are right on your other post, that they will be crowded and shade each other. I hope I'm being clear, put your tall crops on the north side of your beds, and short crops in the front of the taller ones. Good luck in whatever you decide to do

To make this work you are going to need 12 trellis each 3 feet long. That will help keep the air flowing in the inside row, and make it accessible. It will also help keep the pumpkins from over whelming everybody else. You will need to practice fairly strict pruning to keep it all working.
