Basil flower oil
If you've not kept up with keeping your basil trimmed and found it's gone to flower, make this delicious oil!
Stuff rinsed and patted dry basil flowers into a canning jar and fill the jar with a good quality olive oil. As long as the flowers stay below the level of the oil they won't mold. Let it sit for a month and either strain or leave the flowers in it. If you leave the flowers in, you can keep adding oil replacing what you use each time and you'll have continuous basil oil for several months.
Long after your basil is a memory, this oil will lend delicious bouquet to spaghetti sauce and other tomato dishes.

Don't want to thread-jack but I do this with sprigs of rosemary to make rosemary oil. I have some 'brewing' now in fact.
It is absolutely essential that the herb is below the oil as it will mold in a minute! (well, not exactly a minute but a very short time!)

I don't. I keep them in my pantry, which stays cool but not cold year round. I have a food storage area that averages 55° year round also, but I go through the oils too quickly for a long term storage area like that.

I do not refrigerate my rosemary oil. However, early in the summer I had a lot of basil and decided to chop up a bunch and put it in some olive oil to use for cooking. This I do have in the refrigerator. (By the way, I also made basil butter at the same time. This is delicious when used for a grilled cheese and tomato sandwich or just melted on top of a steak after it has been grilled.) I am aggravated at myself that I did not save the recipe for that and cannot find it again online.

I like Martha Stewart's basil butter recipe. It's easily adapted to any herb, and you can even use a combination of herbs (Italian herb butter, Herbs de Provence butter, curry butter...)

The one I used had you melting part of the butter and mixing in the basil for more consistency throughout. Thanks for your link.

Ooh, that would be a good idea. I'll bet some of the essential oil from the herb would react well to the heat as well.

As little or as much as you want! The more you put in, the faster and stronger the flavor will be, but if you only have a few, just drop them in and give it a try.WriterCPA wrote:Can anyone tell me the ratio of oil to basil flowers?
