Saving potatoes

Last autumn I bought some unusual potatoes from an organic shop and just kept them in the fridge in a plastic bag until the spring when I fished them out and let them sprout ready to plant. They were a type with dark purple skin which are slow to spout and have a rather low yield.
I also planted some shop-bought imported-from-France salad potatoes which produced really well. I would like to keep a few of these for seed next spring. Can I keep them in a plastic bag in the fridge like I did the others? Or are they likely to sprout too early?
Does anyone keep their own potatoes in small quantities, and if so how?

I've grown potatoes several seasons now in big rubbermaid bins. I've saved the last of the smallest ones in a cool dark place each time and then replanted them with good success. I also save any store bought ones that sprout well and plant them too..

I've often kept small spuds in a foot or so of dry peat in a tub on the floor over winter in my shed even though it got to minus 10 o C for a few days . They chitted up and grew OK .

Thanks for the replies. Perhaps I'll put them in the garage, near to the door then.
