last zucchini-less day......
As I was serving dinner last night I warned my DH that last night was going to be our LAST zucchini-less day for a LONG TIME.
As per usual I planted too many plants, so many new ones to try so it is zucchini this and zucchini that..... for awhile. Anyone else?

We have only got two plants and they are keeping Alison & I from starving in things like ratatouile. Baked in the oven with the halves scooped out then filled with thick minced beef & gravy or a few roundels lightly softened in a buttered frying pan .
Munchkin won't entertain them says they taste really bitter . Unknown to her she got some sneaked into the all veg soup I made this afternoon .
Only another 14 pints to go We will see if it freezes and does not mush up more than it already is.

put them in smoothies! they are so mild tasting they don't alter the flavor. My grandson loves throwing everything in our Vitamix!!

what great ideas....
When I tend to get behind, on my zucchini eating I put them through the food processor and grade them and freeze them for cake in the middle of winter.

I saw on a "vegan" site, (no, I'm not vegan) where you can get this little grater, and make zucchini noodles out of them, and put sauce on them. It looked delicious! I'll see if I can find the link.

I'll vouch for the zuchinni noodles. I made them this week, and I was impressed how noodle-like they actually were. A good way to use your zucchinis.

Good job putting it in the veg soup!
I have grated zucchini and frozen it and used it in zucchini bread. Turned out very good!

I LOVE noodles! But can't eat wheat. AND I'm getting zucchini heavy on only 2 plants. This is a fabulous find. Can't wait to try it for supper tonite. Has anyone tried using a box grater to make the noodles?
Also, putting them in my morning smoothie - what a great idea!

Search for "julienne grater" and you'll find them. I use a mandoline slicer that has a julienne attachment.

Probably, but if I were you I'd just get a v-slicer or mandoline slicer. The uni-tasker is the enemy of the kitchen drawer (to paraphrase Alton Brown ). Here's an example: http://www.bedbathandbeyond.com/product.asp?SKU=14640630

I already have a food processor that does all of my slicing and some of my grating.
But good point about the drawer, but this seems like it would take up less room that the mandolin thing and I would have no need for the other functions

Personal preference I guess. I have a food processor but I prefer not to pull it out (and then deal with cleaing it) for a quick slicing of a few potatoes or a zucchini. But then, I'm only ever cooking for one, so I don't have a lot of high volume slicing to do!
